Cigarettes with almonds
The recipe I am sharing with you today is a delicacy that you can easily prepare, even on the busiest days. I like to use a food processor to simplify the process, but you can also opt for the traditional method, using a bowl and a spatula.
The first step in making this recipe is to prepare the ingredients. You will need 200 grams of ground almonds, 150 grams of flour, 120 grams of sugar, and 1 packet of baking powder. These ingredients combine perfectly to create a fluffy and aromatic dough. Start by adding the ground almonds, flour, sugar, and baking powder to the bowl of the food processor. It is important to mix these dry ingredients well, so there are no lumps and you achieve a homogeneous mixture.
Once you have a uniform mixture, move on to the next step: add the egg whites. Use two egg whites that you have previously beaten in a separate bowl until they form stiff peaks. This step is essential to give volume to the mixture, providing it with an airy texture. Carefully fold the egg whites into the almond and flour mixture using a spatula, so you keep the air in the egg whites.
After well integrating the egg whites, it is time to transfer the mixture to a baking tray lined with parchment paper. Make sure to spread the dough evenly so that it bakes uniformly. Preheat the oven to 180 degrees Celsius and place the tray inside. Let it bake for about 25-30 minutes, or until the surface turns golden and a toothpick inserted in the center comes out clean.
After removing the cake from the oven, let it cool in the tray for 10 minutes, then transfer it to a wire rack to cool completely. You can sprinkle powdered sugar on top for a more elegant appearance and an extra touch of sweetness. This almond cake is perfect alongside a cup of coffee or tea, being a versatile dessert that can be served both on special occasions and on regular days. Enjoy!
