To prepare a delicious cocoa cake with chocolate icing, we start by carefully separating the eggs. We take 4 eggs and separate the egg whites from the yolks. The egg whites are whipped to a foam using a mixer, gradually adding 7 tablespoons of sugar until we achieve a firm and shiny foam, which will give the cake a fluffy texture. In another bowl, the yolks are beaten together with the remaining sugar (about 3-4 tablespoons, depending on preferences) and vanilla essence. It is essential that this mixture becomes creamy and a deep yellow, indicating that the sugar has completely dissolved.

Once both mixtures are ready, we gently combine them, mixing lightly with a spatula to preserve the air in the egg whites. Then, we sift the flour over the obtained mixture and incorporate it with delicate movements, so that the dough remains airy. Once we have a homogeneous mixture, we divide the dough into two equal parts. In one half, we add sifted cocoa, mixing very well to achieve an even mix of color and flavor.

We prepare a round baking pan, which we line with parchment paper to prevent the cake from sticking. We start pouring the mixtures into the pan, alternating between the two: a spoonful of the cocoa dough, then a spoonful of the white dough, continuing this way until we finish both mixtures. This technique will create a very attractive marbled effect at the end.

After we finish filling the pan, we place it in the preheated oven at medium heat, where we let the cake bake for about 30-40 minutes or until it passes the toothpick test. It is important not to open the oven door in the first 20 minutes, to avoid the cake collapsing.

After taking it out of the oven, we let the cake cool in the pan for 10 minutes, then transfer it to a rack to cool completely. Only when the cake is cool can we attend to the icing. We melt our preferred chocolate (dark or milk) in a bain-marie or microwave, stirring constantly to prevent burning. We pour it evenly over the cooled cake, allowing it to gently slide down the sides, creating an elegant appearance.

Once the icing has set, the cake can be sliced and served. Each slice will reveal a fluffy interior, with a pleasant contrast between the flavors of cocoa and vanilla, perfect for any special occasion!
