Chocolate cake with bananas and raspberries
To prepare a delicious cake that will surely impress any guest, we will start by making the classic sponge cake, which will serve as the base for this savory dessert. The first step is to take care of the egg whites; we will beat them with sugar until we achieve a firm consistency that forms peaks. This will give our sponge a light and fluffy texture. Once the egg whites are ready, we will gradually incorporate the yolks, gently mixing to avoid losing air in the mixture. We then add the oil and water, continuously mixing, and finally, we fold in the sifted flour to prevent lumps from forming. The resulting mixture will be poured into a baking tray lined with parchment paper and baked in a preheated oven at 180 degrees Celsius for about 30-35 minutes, until it passes the toothpick test.
While the sponge cools, we can prepare the delicious cream. We will take a saucepan and, over a double boiler, add all the eggs, sugar, and water. It will be whisked for 15 minutes until the mixture becomes creamy and lighter in color. It is essential to whisk continuously to avoid the eggs curdling. After 15 minutes, we remove the saucepan from the heat and add cocoa and half of the butter or margarine. We mix well until the butter is completely melted and incorporated into the smooth cream.
For the glaze, we will combine all the necessary ingredients, mixing them until we achieve a homogeneous and glossy consistency. The glaze will add an elegant look to our cake, as well as an intense chocolate flavor that will surprise the taste buds.
When the sponge has completely cooled, we will cut it into three equal slices. Each slice will be soaked with a syrup made from water and sugar, to add moisture and extra flavor. The second slice will also be soaked and covered with the remaining cream, and on top, we place fresh raspberries, well-drained of juice. Finally, we place the last slice of sponge, also soaked, and cover the entire cake with the remaining cream. For decoration, we pour the chocolate glaze over the cake and add cherries from a compote, which will bring a touch of freshness and color. Our cake is now ready to be enjoyed, a true delicacy that will capture everyone's attention!
