Black and white cake
To achieve a perfect cake base, the first step is to take care of the egg yolks. In a large bowl, whisk the yolks with sugar using a whisk or an electric mixer on medium speed. It is important for the sugar to dissolve completely and for us to achieve a fluffy and light-colored mixture. This is the base that will give our cakes a fluffy and moist texture.
Once we have obtained a homogeneous mixture, we add the oil, preferably sunflower or olive oil, which will bring extra moisture and flavor. We continue to beat the mixture until the oil is well incorporated and the mixture becomes creamy. It is time to add the remaining ingredients: sifted flour, baking powder, and possibly cocoa or vanilla, depending on preferences. These dry ingredients should be added gradually to avoid forming lumps. We mix with a spatula, using gentle up-and-down movements to keep the air in the batter.
Finally, we can add the beaten egg whites, which we will carefully fold in to maintain the aeration of the mixture. This will make the cake base light and fluffy, an essential aspect for a delicious cake. After obtaining a homogeneous mixture, we pour the batter into a baking tray lined with parchment paper or greased with butter and dusted with flour. We level the surface with a spatula and ensure it is evenly distributed.
The tray with our batter will be placed in the preheated oven at 180 degrees Celsius. It is important not to open the oven door in the first 20 minutes of baking, to avoid the batter collapsing. We bake for about 25-30 minutes, or until a toothpick inserted in the center of the cake comes out clean. After baking, we let the cake cool in the pan for a few minutes, then transfer it to a wire rack to cool completely. Now, our cake base is ready to be decorated with cream, fruits, or chocolate, depending on everyone’s preferences.
