This cake, known in my town as Claudia, is definitely one of the most beloved desserts. It has a perfect combination of textures and flavors that make it irresistible. Preparing it takes a little time and patience, but the final result is worth every effort.
To start, we will take care of the layers. In a large pot, we add one whole egg, diced margarine, sugar, honey, milk, and baking soda. If you prefer, the baking soda can be quenched with a little lemon juice, but I personally chose to use it without quenching. We mix all the ingredients well and put them to boil on low heat, taking care to stir continuously. It is essential to watch how the mixture changes color, a sign that it is starting to become homogeneous and delicious. Once it reaches the desired consistency, we take the pot off the heat and start gradually adding the sifted flour until we get a dough that can be rolled out. We divide the dough into four equal parts and, using a baking sheet, roll out each layer. We bake the layers on the back of the tray, being careful to keep the remaining dough warm so it doesn’t harden.
The baking time varies depending on the oven, but a good hint is when the layers become slightly browned. Now, let’s turn our attention to the cream. In another pot, we put milk, sugar, eggs, and semolina, mixing with a whisk to avoid lumps. We boil the mixture on low heat, continuing to stir, until the cream thickens. Once it is cooked, we let the cream cool a bit, and when it becomes warm, we add the soft margarine, cut into pieces, and mix until we obtain a fine and creamy composition.
For assembling the cake, we place the first layer on a platter, followed by half of the cream. Then, we add another layer and spread a good layer of jam – personally, I prefer raspberry jam, which adds a tangy note and balances the sweetness. We continue with another layer, the rest of the cream, and finally, the last layer. We let the cake cool, ideally overnight, for the flavors to meld. The next day, we slice the cake and dust it with powdered sugar. It is a delicious dessert, perfect for any occasion, that will surely impress everyone!
