Preparation time: 20 minutes
Baking time: 25 minutes
Total time: 45 minutes
Number of servings: 8
Ingredients for the base:
- 150 g butter
- 200 g dark chocolate (minimum 70% cocoa)
- 150 g sugar
- 100 ml milk
- 4 eggs
- 100 g flour
- 1 packet of baking powder
- A pinch of salt
Ingredients for the glaze:
- 100 g dark chocolate
- 50 g butter
- 2 tablespoons of cooking cream
Preparation:
1. Start by preparing the base. In a saucepan, add the diced butter, chopped chocolate, sugar, and milk. Place the saucepan on the stove over low heat. Stir constantly with a wooden spoon until all the ingredients melt and combine. This is the delicious base of the Amico cake, which will provide an intense chocolate flavor.
2. Remove the saucepan from the heat and let the mixture cool slightly. Meanwhile, preheat the oven to 180 degrees Celsius and prepare a 22 cm diameter cake pan, greased with butter and lined with baking paper.
3. In a large bowl, beat the eggs together with a pinch of salt until fluffy. Then, incorporate the cooled chocolate mixture, gently mixing to avoid losing air in the composition.
4. Sift the flour and baking powder over the chocolate and egg mixture, then gently fold with a spatula until there are no lumps. It is essential not to overmix to maintain the light texture of the base.
5. Pour the mixture into the prepared pan and bake for 25 minutes or until a tester inserted in the center comes out clean. Allow the base to cool in the pan for 10 minutes, then invert it onto a wire rack to cool completely.
6. While the base cools, prepare the glaze. Melt the dark chocolate along with the butter and cooking cream in a bowl over a double boiler or in the microwave, stirring until it becomes a smooth and glossy mixture.
7. Once the base has completely cooled, pour the chocolate glaze on top, allowing it to flow gently over the edges for an attractive look. Let the glaze set at room temperature.
