The quinces are peeled and cored, then sliced into finger-thick pieces. After being cut, they are placed in cold water to prevent oxidation and maintain their vibrant color. This step is essential, as quinces can quickly turn brown, and we want a visually appealing dessert.

While the quinces are in the water, we prepare the syrup. Sugar is placed in a large pot, along with enough water to completely dissolve it. Preferably, use cold water to allow the sugar to dissolve better. Add a few cinnamon sticks to give an irresistible aroma to the syrup. You can also opt for a few cloves or a splash of vanilla to enhance the flavor.

Boil the mixture over medium heat, stirring constantly until the sugar is completely dissolved and the syrup begins to boil. Once the syrup reaches a boiling point, let it boil for about 5-7 minutes until it thickens slightly. It is important to monitor the process to avoid burning the sugar, which could ruin the entire dish.

After the syrup is ready, remove the quinces from the water and drain them well. Then, carefully add them to the hot syrup. Gently stir so that the quince slices are evenly coated with the sweet and aromatic syrup. Continue to cook the mixture over low heat for about 15-20 minutes, or until the quinces become tender but do not fall apart. During this time, the flavors will blend perfectly, and the quinces will absorb the sweetness of the syrup.

Once the quinces are ready, you can transfer them to a sterilized jar for preservation. Ensure that the syrup completely covers them to prevent oxidation. Allow them to cool to room temperature before storing in the refrigerator. This dessert can be served both warm and cold, alongside a scoop of yogurt or vanilla ice cream, creating a pleasant contrast between hot and cold. The caramelized quinces in cinnamon-flavored sugar syrup are not only a delicious treat but also a true delight for the senses.
