Strawberry and beet smoothie

Beverages - Strawberry and beet smoothie by Nora G. - Recipia

Raw beet gives this strawberry and beet smoothie its vivid color, and yogurt makes it creamy and easy to drink. I chose yogurt instead of whipped cream or ice cream for a lighter version; I cut the beet into small cubes before switching on the food processor. Preparation: 10 minutes. Cook time: 0 minutes. Total time: 10 minutes. Servings: 1. About 115 kcal and 5 g protein per serving.

Ingredients

  • 100 g strawberries
  • 50 g raw beetroot
  • 100 ml plain yogurt

Preparation

1. Wash the strawberries and remove the stems. Peel the beet and cut it into small cubes. 2. Put the strawberries, beet and yogurt in the food processor and blend until smooth. 3. Serve immediately.

Notes

For a dairy-free version, use 100 ml unsweetened soy yogurt; the yogurt in the basic version contains dairy. Choose a small, firm beet with smooth skin, as a wrinkled one may be more fibrous. If the beet is large and firm, cut it into even smaller cubes. A powerful food processor makes the drink smoother, while a less powerful one may leave tiny flecks of beet. If it comes out too thick, thin it with 1-2 tablespoons of cold water, added one at a time. The color may darken after blending, especially when the beet is very red. The drink separates if left to stand, so don't make it long before serving. Pour it into a tall glass and serve with a slice of toast.

Frequently asked questions

Can I use cooked beet?

Yes, use 40 g cooked and cooled beet; the flavor will be less earthy than with raw beet.

Can I use kefir instead of yogurt?

Yes, use 100 ml plain kefir; the drink will be thinner.

What should I do if there are still pieces of beet?

Finely grate the beet before adding it to the food processor, then blend for another 15 seconds.

Can I use frozen strawberries?

Yes, leave them at room temperature for 10 minutes before blending so they break down more easily.
