In a non-stick skillet, add a tablespoon of oil and heat it over medium heat. Add the diced bacon and fry it until crispy. In a separate bowl, whisk the eggs until fluffy and homogeneous. Add the spinach, bacon, and onion mixture to the bowl with the eggs, along with salt and pepper, mixing everything well. At this stage, you have the option to add other ingredients such as grated cheese or herbs to enhance the flavor.

Pour the obtained mixture into the prepared dish, ensuring it is evenly distributed. If you want to combine the omelette with another type, keep the mixture in the refrigerator until you are ready to bake it. This recipe is baked in a water bath, which gives it a soft and fluffy texture. In a bain-marie dish, add warm water up to the level of the omelette in the baking dish, then place everything in the preheated oven.

Bake for 25-35 minutes at a moderate heat or until the omelette is well cooked and slightly browned at the edges. Remove the dish from the oven and let the omelette cool completely. Once cooled, cut it into cubes or slices, depending on your preference, and arrange them creatively on a platter.
