Spinach, Cheese, and Cherry Tomato Tart
To prepare a delicious spinach and cheese tart, we start by making the crust. In a large enough bowl, we add a fresh egg, soft butter, cornmeal, and begin to knead the ingredients. It is important to gradually add water and flour until we obtain a homogeneous dough, but not too hard. This dough will be the perfect base for our tart. Once we have formed it, we wrap it in plastic wrap and put it in the fridge to firm up a bit while we prepare the filling.
Meanwhile, we wash the spinach well, removing all impurities. We blanch the spinach in boiling water for a few minutes until it becomes soft and retains its vibrant color. After draining it, we chop it finely. In a pan, we add a little butter and, over medium heat, add the finely chopped green onion. We let the onion sauté lightly, and when it becomes translucent, we add the chopped spinach. We continue to cook the mixture, allowing all the accumulated liquid to evaporate so that it does not soften the dough.
In another bowl, we beat the eggs, then add grated cheese and feta cheese, mixing well until homogeneous. After cooling the spinach mixture, we incorporate it into the egg and cheese mixture. It is important to taste the mixture, but I did not add salt since the feta is already salty.
Now we return to our dough. We take the portion of dough we set aside and, using a rolling pin, roll out the remaining dough and place it in a prepared baking dish lined with parchment paper. It is essential to cover the edges of the shape well. Over the dough, we place parchment paper again and add some beans to prevent the dough from puffing up. We place the dish in the preheated oven and bake until the dough gets a golden and crispy crust.
After removing the dish from the oven, we carefully arrange the cherry tomatoes on the surface of the crust. Then, we pour the spinach and cheese filling, making sure to distribute it evenly among the tomatoes. From the reserved dough, we cut thin strips that we braid, forming a beautiful decoration around the edge of the tart, and in the middle, I created a star inspired by my daughter's idea.
To achieve a shiny color, we brush the top of the tart with beaten egg, and then we put the dish back in the oven. We bake until the tart becomes golden and appetizing. This tart is delicious both warm and cold, perfect for any occasion or simply to enjoy a healthy and tasty meal. Enjoy every slice!
