Spicy meatballs
Preparing the bombs is a simple yet extremely satisfying process that will transform an ordinary meal into a remarkable culinary experience. We start by preparing the bread crumb, which we will mix with 100 ml of creamy yogurt. Here, the yogurt plays the role of providing juiciness and a pleasant taste to the dish. We then add the minced meat, which can be pork, beef, or a combination of the two, depending on personal preferences.
We continue with a whole egg, which will bind the ingredients together, thus giving a uniform and pleasant texture. The finely chopped onion will add a note of flavor, while the sprig of fresh rosemary, along with the two pinches of dried rosemary, will provide an unmistakable aroma. It is essential to salt and pepper the mixture to taste, ensuring that the bombs will be delicious.
After mixing all the ingredients, we start forming the balls. This stage can be quite fun, and their size can vary according to preferences. Once we have obtained the bombs, we roll them in flour to help them become crispy during frying. Then, we place them in hot oil and let them brown until they turn golden.
Regarding the sauces, we divide the remaining yogurt (400 ml) into two portions. The first part will be enriched with ketchup, grated orange peel, and pistachios, which can be chopped or ground. This sauce will provide a pleasant contrast between sweet and salty, perfect to complement our bombs.
The second part of the yogurt will be turned into a spicier sauce. We add crushed garlic, grated telemea cheese, finely chopped green parsley, and optionally, ground pepper or hot paprika, to add an extra flavor and color. This variant of the sauce, although less sweet than the first, will add an intense and savory note to the dish.
After frying the bombs and preparing the sauces, we serve the dish warm, alongside a fresh salad or grilled vegetables, for a contrast of textures and flavors. This versatile recipe can be adapted according to everyone's preferences, thus becoming a perfect meal for any occasion.
Ingredients: 300 g minced meat, 3 slices of bread (only the crumb is used), 500 ml yogurt, 1 whole egg, 1 small onion (or 1 green onion), flour, oil, a sprig of fresh rosemary (I used dried), For the sauce we need: 1 tablespoon ketchup, 20 g pistachios, 50-100 g telemea cheese or burduf cheese (I prefer telemea), 1 orange, 2 cloves of crushed garlic, hot paprika or ground pepper, and a bit of chopped fresh parsley, 400 ml yogurt.
