To prepare this delicious recipe for cheese and peach stuffed doughnuts, we start by preparing the necessary ingredients. It is essential to have everything we need at hand, so that the cooking process is as smooth and enjoyable as possible. We will use 125 ml of water, 50 g of butter, salt, 125 g of flour, eggs, cheese, sour cream, lemon juice, peaches, and parsley leaves.

In a pot, we bring the 125 ml of water to a boil together with 50 g of butter and a pinch of salt. It is important to let the mixture come to a first boil, at which point we will add all at once the 125 g of flour. We quickly stir with a wooden spoon or a whisk, making sure that no lumps form. Once the mixture becomes homogeneous, we take the pot off the heat.

While stirring, we add the eggs, one by one, to the hot mixture. It is recommended to use a mixer on high speed to obtain a fine and airy paste. This step is crucial to ensure a fluffy texture for the doughnuts. After we obtain a homogeneous dough, we prepare a tray, which we cover with parchment paper or greased baking paper with a splash of oil.

Using a teaspoon, we form about 30 small doughnuts, but I prefer to make them a little larger for a richer taste. We place the doughnuts on the tray, leaving enough space between them, as they will puff up while baking. We preheat the oven to 180°C and place the tray inside, letting the doughnuts bake for about 25 minutes at a low heat. It is important not to open the oven door in the first 15 minutes to allow the doughnuts to rise evenly.

After the doughnuts are nicely browned, we take them out of the oven and let them cool on a rack. In the meantime, we take care of the filling. Tear the parsley leaves and prepare the cheese cream by mixing the cheese with 2-3 tablespoons of sour cream, 2 tablespoons of lemon juice, and seasoning with salt and pepper to taste. Make sure the cheese is well blended and has a creamy consistency.

Next, we cut the peaches into thicker slices. After the doughnuts have cooled, we cut them horizontally, being careful not to detach them completely. We place a slice of peach and a parsley leaf on the bottom of each doughnut, and then generously add the cheese cream. Finally, we place the tops of the doughnuts, thus creating a delicious mini-sandwich. These cheese and peach doughnuts are perfect for a snack or dessert, and the combination of textures and flavors will surely delight everyone's taste buds. Enjoy your meal!
