Egg Paste (II)
To prepare a delicious spread with boiled eggs and green onions, we start by boiling the eggs. We choose fresh eggs, preferably from local farmers, and place them in a pot with cold water. We turn on the heat and let them boil for about 9-10 minutes to get hard-boiled eggs. Once they are boiled, we immediately plunge them into cold water to stop the cooking process and maintain the perfect texture. We let the eggs cool for a few minutes, then peel them.
In the meantime, we take care of the green onions. This is the ingredient that will add a touch of freshness and a slightly spicy flavor to our dish. We wash the green onions well under a stream of cold water, then chop them into small pieces, making sure to use both the white and green parts to take advantage of their flavors.
Once the eggs are peeled, we mash them in a large bowl. We use a fork or a potato masher to achieve a creamy texture, but with small chunks to add texture. After obtaining a smooth paste, we add the chopped green onions, mixing them well. It is important to ensure that the onions are evenly distributed in the mixture so that every bite is full of flavor.
We season the mixture with salt and freshly ground pepper to taste. These spices will enhance the natural flavors of the ingredients. When we are satisfied with the taste, we start adding the extra virgin olive oil. We gradually pour in the oil, stirring continuously until the mixture becomes a smooth paste that is easy to spread on bread. The oil not only enhances the flavor but also helps create a silky texture, perfect for spreads.
To serve, we choose fresh bread, preferably a baguette or rye bread, which will perfectly complement the mixture. We cut thick slices and lightly toast them in a pan or toaster to achieve a crispy crust. Then, we generously spread the egg and green onion paste on each slice, garnishing with a few rings of green onion or a drizzle of olive oil for an attractive look.
