Veal soup with homemade noodles
To prepare a delicious veal soup, the beginning is essential. Wash the veal bones well under a stream of cold water to remove impurities and any residues. Once clean, place them in a large pot and cover them with cold water, adding a pinch of salt to enhance the flavor. Put the pot on medium heat and wait for it to come to a boil.
As the water starts to boil, a foam will appear on the surface. This is a natural process, but it is important to remove it with a skimmer to achieve a clear broth without impurities. Once the foam has been removed, it is good to reduce the heat and let the soup simmer slowly. Make sure to check the water level and add more if you notice it has dropped too much.
When the veal starts to become tender, it's time to add the vegetables. Cut the carrots, celery, and bell pepper into large pieces, and leave the onion whole to give the soup a rich flavor. Add them to the pot and let everything boil together, stirring occasionally, until the meat easily comes off the bones and the vegetables are cooked. This process can take about an hour, but it also depends on the size of the meat pieces.
After the soup is ready, carefully remove the bones and vegetables using a skimmer or strainer. You will want to keep only the liquid, which is now full of flavor. Put the soup back on the heat and wait for it to start boiling again. At this point, add the noodles, which will absorb the flavors of the soup. Let them boil for about ten minutes, until they become soft and slightly tender.
To finish the soup, adjust the taste with salt and pepper, tweaking the spices to your liking. Don't forget to add slices of boiled carrot and diced meat, which will add extra texture and flavor. After a few boils, take it off the heat and sprinkle freshly chopped parsley on top for an extra touch of color and freshness.
Now, your soup is ready to be enjoyed! Serve it hot in a deep bowl and savor every spoonful. Enjoy your meal!
