We start by preparing all the necessary ingredients for our delicious spinach soup. We take a suitable pot and put water to boil, being careful not to fill it too much, so that we have enough room for the vegetables. Meanwhile, we dedicate ourselves to preparing the spinach. It is essential to wash it well under cold running water, ensuring that we remove any impurities. After washing, we break off the stems from the leaves to ensure we only use the tenderest part.

We continue with the onion, wild garlic, and garlic. We wash and chop them: the onion into thin rings, and the wild garlic into long strips, so that the flavors are released evenly during cooking. The garlic, with its unmistakable aroma, will add an extra flavor to our soups. So, we slice the garlic thinly.

When the water in the pot starts to boil vigorously, we add the spinach, being careful to gently push it into the water to soften quickly. Then, we put the pot on low heat and wait for the spinach to reduce in volume. When this happens, we add the onion, garlic, wild garlic, and diced potatoes. The potatoes will not only provide a creamy texture to the soup but also a natural sweetness. We cover the pot with a lid and let the ingredients simmer on low heat for 20-25 minutes, stirring occasionally to prevent sticking.

After the boiling time has expired, we take the pot off the heat and use an immersion blender to puree the vegetables. Our goal is to achieve a smooth, homogeneous cream soup that harmoniously blends the flavors of spinach, onion, and garlic. Once we have reached the desired consistency, we put the pot back on the heat and season the soup to taste with salt and a few flavor cubes, which will enhance the aroma.

Finally, we serve the hot soup in bowls or soup plates, drizzling it with quality olive oil, which will add a touch of elegance and a refined taste. For an extra texture and flavor, we sprinkle coarsely chopped or finely ground pistachios in a food processor, and for those who appreciate a bit of spice, chili flakes are the perfect choice.
