Meanwhile, in a large pot, we bring plenty of water to a boil; it is important to have enough water to achieve a rich and tasty soup.
In the meantime, we take care of the vegetables. The onion is finely chopped, and the carrot is grated, both ingredients to be used to add sweetness and texture to the soup. When the bacon is ready, we add it to the pot with boiling water, along with the onion and carrot, including the oil in which the bacon was sautéed. These ingredients combine perfectly, and the flavors will start to intertwine.
After adding the bacon and vegetables, it’s time to deal with the lettuce. It is cut into thin strips and added to the pot with the soup. At first, the amount of lettuce may seem overwhelming, but as it cooks, it will reduce considerably. While the lettuce is cooking, we will focus on preparing the omelet. We separate the eggs, putting five yolks in a bowl and keeping the whites in another container.
From the five egg whites and the remaining eggs, we will prepare a paparadă (omelet) in a pan with 100 ml of oil. At the end, we add finely chopped dill, which will provide a fresh and aromatic taste. When the lettuce has cooked, we add the omelet to the pot, letting everything simmer together for another 10 minutes. Finally, we add salt, pepper, and vegeta to taste, adjusting the spices to achieve a balanced flavor.
The remaining yolks are mixed with sour cream, using a whisk or mixer to obtain a homogeneous composition. Gradually, we pour the hot soup over the egg and sour cream mixture, stirring continuously to avoid curdling the eggs.
