Romanian chicken, vegetable and pasta ciorbă

In this Romanian chicken, vegetable and pasta ciorbă, the chicken simmers before the vegetables, and the pasta goes in only for the last five minutes. It has a hearty broth, with chunks of carrot and potato, peas and mushrooms. I keep the bone in and cut the pieces small enough to fit easily on a spoon. Prep: 20 minutes. Cook: 55 minutes. Total time: 75 minutes. Serves: 4. About 500 kcal and 25 g of protein per serving.
Ingredients
- 1/4 home-raised chicken
- bone-in (500 g)
- 2000 ml water
- 1 1/2 teaspoons salt
- 1 Knorr chicken stock cube
- 3 large carrots (300 g)
- 1 medium parsley root (100 g)
- 1 small onion (80 g)
- 1 red bell pepper (150 g)
- 300 g frozen peas
- 1 can sliced champignon mushrooms (230 g drained)
- 1/2 teaspoon white pepper
- 1/4 teaspoon chili (optional)
- 3 large potatoes (700 g)
- 100 g small pasta
- 15 g chopped fresh parsley
Preparation
1. Cut the chicken into portions and put it in a pot with 2,000 ml cold water and 1 teaspoon salt. Simmer for 30 minutes, until the meat is almost tender. 2. Peel the carrots and parsley root and slice them into rounds. Finely chop the onion, dice the pepper and drain the mushrooms. Add the vegetables, frozen peas and mushrooms to the pot, along with the Knorr stock cube, 1/2 teaspoon white pepper and, if you like, 1/4 teaspoon chili. Simmer for 8 minutes, until the carrots are almost tender. 3. Peel the potatoes, cut them into cubes and add them to the pot. Simmer for 12 minutes, until tender. Taste the broth and add up to 1/2 teaspoon salt if needed. 4. Add the small pasta to the soup and cook for 5 minutes. 5. Turn off the heat and stir in the chopped fresh parsley.
Notes
If the chicken pieces are large, they may need another 5-10 minutes to cook. Drain canned peas and add them with the pasta. Knorr cubes vary in saltiness, so I taste the broth before adding more salt. The pasta contains gluten. The soup keeps in the fridge for up to 3 days, but the pasta absorbs the broth; if I make it ahead, I cook the pasta separately. I serve it with bread, and for 8 servings I double the quantities.
Frequently asked questions
Can I use chicken breast instead of a bone-in piece?
Yes. Cut 400 g chicken breast into 3 cm cubes, add it after the potatoes have cooked for 5 minutes and simmer for another 10 minutes, until the meat is no longer pink in the center.
What can I use instead of parsley root?
Use 100 g peeled celeriac, cut into cubes, and add it to the pot with the carrots.
What should I do if the broth is too salty?
Add 250 ml hot water and simmer the soup for another 2 minutes, then taste it again.
Why did the potatoes fall apart?
Floury potatoes can break up as they cook. Choose waxy potatoes and cut them into cubes about 2 cm across.
