Radauti Soup III
To prepare a delicious chicken soup with vegetables, we start by ensuring that all the ingredients are properly prepared. We take two fresh chicken breasts, cut them in half so that they cook evenly and have a pleasant texture. These breasts are boiled in a large pot of cold water, which will help extract the flavors from the meat.
Once the water has started to boil, it is essential to remove the foam that forms on the surface, as it contains impurities and fats that will not contribute to the final taste of the soup. After cleaning the soup of foam, we add the cleaned and chopped vegetables into large pieces. We recommend carrots, celery, onion, and parsley, but you can also use other preferred vegetables. These will provide a rich taste and an unmistakable aroma to the soup.
Don't forget to add salt, which will help intensify the flavors during boiling. We let everything simmer over moderate heat so that the meat is well cooked and the vegetables soften. This process takes about 30-40 minutes, but it's good to check periodically if the meat is cooked through a simple test. Once the meat and vegetables are cooked, we remove them onto a separate plate, being careful not to break them.
The resulting broth is strained using a cheesecloth or a fine sieve, to eliminate any remaining solids. This broth will be the base of our soup. The meat is shredded into small pieces and then added to the strained broth. At this point, we adjust the taste with salt and vinegar, to achieve a perfect balance between the flavors of the soup.
After adjusting the taste, we let the soup simmer for a few more minutes. In a separate bowl, we mix the sour cream with the egg yolks, forming a creamy mixture that will enrich the soup. Once the soup has boiled, we take a spoonful of the broth and gradually add it to the sour cream and egg yolk mixture to avoid the eggs curdling suddenly. After well integrating the mixture, we pour it back into the pot, stirring constantly. We let the soup cook for a few minutes to homogenize and achieve a velvety texture.
In the end, we can add fresh herbs, such as parsley or dill, for an extra touch of freshness. We serve the soup hot, alongside crispy croutons or fresh bread. This chicken soup with vegetables is not only comforting but also full of nutrients, perfect for chilly days or to revitalize any meal.
