To prepare a delicious meat soup, the first step is to ensure we have all the necessary ingredients. We start with the meat, which can be beef, pork, or chicken, depending on everyone’s preferences. We wash the meat under a stream of cold water to remove impurities, then put it to boil in a large pot with water. It is important to use a pot large enough to allow the ingredients to boil evenly.

Once the meat starts boiling, a foam will form on the surface. This should be removed with a skimmer to obtain a clearer and tastier broth. Next, we add the vegetables: the onion, peeled and washed, the carrot, the parsnip, the parsley root, the celery stalk, washed and cut in half, and the bell pepper, seeded and chopped. These vegetables will not only add flavor to the soup but also a sweet and pleasant taste.

To enhance the flavor, we add bay leaves, pepper, and a little salt. We let everything boil over medium heat until the meat and vegetables are well cooked. When ready, we remove the components from the pot, and the soup is strained carefully to eliminate any impurities. The pot can be easily washed to be used again.

The boiled vegetables can be discarded or, if preferred, they can be mashed and added back to the soup for a richer consistency. The carrot, due to its sweet taste, is cut into small pieces and reintroduced into the soup. Now it's time to take care of the greens. The parsley is washed and finely chopped, and the garlic is peeled and crushed to release its aroma.

The meat, after being allowed to cool slightly, is deboned and shredded into smaller pieces so it can easily integrate into the soup. In a bowl, we mix the sour cream with the egg yolks and a pinch of salt, taking care to obtain a homogeneous mixture. Here, we gradually add 2-3 ladles of hot broth, stirring continuously to avoid curdling the sour cream.

The sour cream and yolk mixture is poured into the pot with the soup, along with the meat, chopped carrot, crushed garlic, and chopped parsley. The soup is put on low heat, letting it reach the boiling point so that the flavors blend perfectly. Finally, it is seasoned with salt to taste and, if desired, a little vinegar can be added to enhance the acidity and give a note of freshness to the soup. This is a traditional recipe, but each family adds its own personal touch, making each serving a true delicacy. Enjoy the soup hot, alongside a slice of fresh bread!

 Ingredients: two whole chicken thighs; half a chicken breast; 2-3 liters of water; one onion; one carrot; one parsnip; one parsley root; one celery stalk; one bell pepper; two bay leaves; 5-6 black peppercorns; salt (to taste); 300 g sour cream; 4 egg yolks; 3-4 tablespoons of vinegar (to taste); 4 cloves of garlic; one bunch of parsley.
