To prepare a delicious salad soup with omelette and smoked speck, we start by organizing all the necessary ingredients. First, we make sure we have ham, fresh salad leaves, garlic, milk or whey, water or broth, lemon, eggs, sour cream or yogurt, vinegar, and of course, smoked speck. This combination of ingredients will give us a tasty soup full of flavors.

The first step is to fry the ham, cut into small pieces, in a pan. We ensure that the pan is well heated to achieve an even browning. Once the ham becomes crispy and golden, we remove it to a plate and keep the fat left in the pan. If we notice that the ham hasn’t left enough fat, we will take this opportunity to add the salad leaves, cut into strips, into the same pan, along with a whole clove of garlic, which we lightly crush to release the flavors.

If the ham has left a lot of fat, we can discard it, and then we will sauté the salad in the pan. The garlic, when the salad starts to soften, we remove it, as we do not want the taste to be too strong. Once the salad is sautéed, we transfer it to a pot, where we add the milk or whey, water or broth, and the lemon slices. We let the mixture boil for 10-15 minutes, being careful not to let the salad melt completely but to keep its texture.

After the soup has boiled, we let it cool slightly, and during this time, we prepare the omelette. Dad used to add a little cornmeal to the omelette mixture to give it a fluffier texture. Thus, we beat the eggs together with the cornmeal, a little salt, and pepper, and we fry them lightly in a pan until we get a nicely browned omelette.

Once the omelette has cooled, we cut it into squares or strips and add it to our soup, along with sour cream or yogurt, vinegar, and the smoked speck, which will add an extra flavor. We gently mix to combine all the ingredients and let the soup infuse with the flavors for a few minutes before serving. This salad soup with omelette and smoked speck is not only nourishing but also full of tastes that remind us of family meals.

 Ingredients: 2 slices of pancetta (meaning meat and fat from the pig's belly. It would have been better if it was smoked, but I didn't have any) 1 slice of smoked speck cut into squares 1/6 head of curly lettuce (gentilina) 2 slices of lemon (mine were pickled) a pinch of garlic powder (or 1 whole clove of garlic) salt (I didn't add any since I had both the garlic and the pickled lemons) an omelet made from 2 eggs 1 ladle of milk* and 4 ladles of water or vegetable soup 1 teaspoon of vinegar or lemon juice 1 cup of sour cream or yogurt
