Green bean and vegetable ciorbă

Green bean and vegetable ciorbă, a Romanian soup, simmers in stages, with the beans added after the peppers so they keep their shape. The vegetables and tomatoes make a hearty broth with tender beans; it’s good hot or cold. I serve it hot, with sour cream on the side so everyone can add as much as they like. Prep: 20 minutes. Cook: 56 minutes. Total: 76 minutes. Servings: 6. About 160 kcal and 6 g protein per serving.
Ingredients
- 500 g green beans
- 3 tablespoons oil
- 1 medium onion (150 g)
- 1 parsley root (80 g)
- 1 parsnip (100 g)
- 1/2 celery root (150 g)
- 2000 ml water
- 1 1/2 teaspoons salt
- 1/2 teaspoon ground pepper
- 2 medium bell peppers (300 g)
- 4 medium tomatoes (500 g)
- 15 g dill
- 15 g parsley
- 6 tablespoons sour cream
Preparation
1. Trim the ends off the green beans and break them into bite-sized pieces. Peel the vegetables and slice the roots into rounds, finely chop the onion, cut the peppers into squares and dice the tomatoes. 2. Heat the oil in a pot and sauté the onion and roots for 4 minutes, until the onion softens. 3. Pour in the water, add the salt and pepper and simmer for 12 minutes, until the roots start to soften. 4. Add the peppers and simmer for another 10 minutes, until softened. 5. Add the green beans and simmer for 18 minutes, until tender. 6. Add the tomatoes and simmer for another 10 minutes. Chop the dill and parsley, add them to the pot and let the soup come to a boil 2 or 3 times, about 2 minutes. Taste and adjust the salt. 7. Serve the soup hot, with sour cream.
Notes
Choose firm green beans with no visible strings; wide, fibrous ones can stay tough even if they cook longer. I plan my prep around the meal, since trimming the beans takes a little time; when I double the quantity, I use a large pot and keep the same proportion of water. Very juicy tomatoes can make the broth thinner; you can simmer it uncovered for the last few minutes. Keep the soup in the fridge for up to 3 days and store the sour cream separately, adding it only to each bowl. It can also be eaten cold, and if you want a dairy-free version, leave out the sour cream; fresh bread goes well alongside.
Frequently asked questions
Can I use frozen green beans?
Yes, add them straight from the freezer and simmer for about 20 minutes after the broth comes back to a boil.
Can I replace fresh tomatoes with canned tomatoes?
Yes, use 400 g diced tomatoes and add them with their canning liquid.
How long should the green bean pieces be?
Cut them into 3-4 cm pieces so they’re easy to pick up with a spoon.
