To prepare a delicious broccoli soup with carrots and potatoes, we will start by gathering all the necessary ingredients. We will need 300 grams of fresh broccoli, one medium carrot, one suitably sized potato, 500 ml of water, a pinch of salt, 200 ml of milk, 100 ml of cream, 2 tablespoons of chicken soup (or one soup cube), 150 grams of grated cheese, and a few slices of bread for toasting.

In a large pot, we bring the water to a boil and add a pinch of salt. Once the water starts boiling, we add the peeled and cubed potato, the sliced carrot, and the broccoli florets. We let the vegetables boil for about 15-20 minutes until they become soft and slightly tender. This process will help release the flavors and nutrients of the vegetables.

After the vegetables are cooked, we drain half of the water, being careful to keep the liquid needed to achieve the desired soup consistency. Then, using a hand blender or a regular blender, we blend the vegetables together with the remaining liquid until we obtain a smooth and fine cream. It is important to ensure that there are no large chunks left, so the soup will be more pleasant to serve.

In a separate bowl, we mix the milk with the cream and dissolve the chicken soup or soup cube, stirring well to avoid lumps. We add this mixture to the vegetable cream, stirring constantly, to achieve a creamy and consistent soup. We put the soup back on the heat to warm it well, but without allowing it to boil, to preserve the delicate taste of the ingredients.

When the soup is hot, we add the grated cheese, stirring until it completely melts, thus enriching the soup with a savory flavor and a velvety texture. We season with salt and pepper to taste to enhance the flavors.

To complete this dish, we toast a few slices of bread, and when they are ready, we spread melted cheese on them, creating a perfect accompaniment for our soup. We serve the soup hot in deep bowls, alongside the toasted bread, and each spoonful will bring a touch of comfort and joy. Enjoy your meal!
