Garlic soup
To prepare a delicious mushroom soup with bruschetta, we will follow a few essential steps that will ensure a savory dish. We start by washing the mushrooms well under a stream of cold water, making sure to remove any impurities. After cleaning them, we chop them finely, as the small size will allow the flavors to reveal themselves more quickly in the soup.
In a pot, we add the two tablespoons of olive oil and heat it over medium heat. When the oil is hot enough, we add the chopped mushrooms and sauté them lightly, stirring constantly to avoid burning. This process will intensify the aroma of the mushrooms, giving the soup a deep flavor. After about 3-4 minutes, when the mushrooms have started to soften and take on a slight golden hue, we add the garlic pressed through a garlic press. We continue to sauté the ingredients for another 2-3 minutes, being careful not to let the garlic burn, as it could make the soup bitter.
The next step is to add the vegetable broth, prepared from water and the two tablespoons of Vegeta. We mix well and let the soup come to a gentle boil. Once the soup starts to boil, we season with salt to taste, keeping in mind that Vegeta already contains salt. We let the soup simmer for about 10 minutes, during which the flavors will combine perfectly.
In a small bowl, we dissolve the starch in cold water, mixing well to avoid lumps. We add this mixture to the soup, continuing to boil for another 10-15 minutes. The starch will slightly thicken the soup, giving it a pleasant texture.
Meanwhile, we take care of the bruschetta. We slice the bread into thin slices and toast them on both sides in a pan or on the grill until they become crispy. After the bread is ready, we drizzle it with a little olive oil and rub each slice with garlic to add a flavorful taste. We sprinkle freshly chopped basil over the bruschetta and decorate them with the sautéed mushroom slices left over from the soup preparation.
