To prepare a delicious and healthy stuffed cabbage dish, we start by finely chopping a medium onion and grating a large, fresh carrot. These two ingredients are essential to add a savory flavor to our dish. In a deep skillet, we heat 3 tablespoons of sunflower or olive oil, according to preference. We sauté the onion and carrot together, stirring frequently, until the onion becomes translucent and the carrot releases its aroma.

Meanwhile, we prepare the rice. We wash 200 g of rice well under cold water, then partially boil it in salted water for about 10 minutes. The rice should not be fully cooked, as it will continue to cook in the oven. Once ready, we drain it and add it to the skillet, mixing well to combine the flavors. We add a pinch of salt and freshly ground pepper, adjusting the spices to taste. When the mixture has cooled slightly, we bind the composition with a beaten egg, which will help maintain the filling's shape.

In the meantime, we take care of the cabbage. We remove the outer leaves that are pale or damaged and wash it under a stream of cold water. With a knife, we remove the core, then we boil the cabbage in a large pot of salted water with a teaspoon of magic borscht, which will add a special flavor. We let the cabbage boil for about 10-15 minutes, until the leaves become slightly flexible. We remove the cabbage leaves and let them cool, then we remove the tougher veins to facilitate the filling.

Each cabbage leaf is filled with the vegetable mixture, adding a few blanched spinach leaves in the center, which will add a note of freshness. We roll each roll tightly, ensuring that the filling does not come out during baking. We place the rolls in a baking dish, and on top, we put the remaining finely chopped cabbage, which we sprinkle with a little lemon salt, rubbing it between our palms to intensify its aroma.

To finish the dish, we drizzle everything with diluted broth in a little water, in which we have also added dried thyme, a spice that pairs perfectly with the rich flavors of the rolls.
