Shrimp Salad
To prepare a delicious and comforting recipe, we need a few simple yet essential ingredients that will combine harmoniously. We start by boiling the potatoes. Choose medium-sized potatoes, which you wash well under cold running water. After washing, cut them into smaller cubes to boil evenly. Then, place them in a pot with water and a teaspoon of salt. Let them boil for about 20-25 minutes, or until they become soft but not overly soft. When they are ready, drain them and let them cool slightly, then grate them using a large grater.
Meanwhile, we take care of the shrimp. Choose fresh or frozen shrimp, but make sure they are of good quality. Put a pot of water with a teaspoon of salt to boil. When the water reaches boiling temperature, add the shrimp. Let them boil until the water starts to boil again, about 2-3 minutes. It is important not to leave them too long, as they can become tough and lose their delicate texture. Once they are ready, remove them and immediately transfer them to a bowl with cold water and ice. This will stop the cooking process and help retain their pink color. Leave them in this mixture for 2-3 minutes to cool completely.
After the shrimp have cooled, peel them. Now we are ready to combine the ingredients. In a large bowl, add the grated potatoes and the peeled shrimp. It’s time to add the mayonnaise. The amount of mayonnaise can vary depending on your personal preferences, but I suggest starting with 2-3 tablespoons and gradually adding until you reach the desired consistency. Mix well to combine all the ingredients. If you wish, you can cut the shrimp in half to make them easier to eat.
This shrimp potato salad is perfect as both a side dish and a main course. You can serve it immediately or let it chill in the refrigerator for a bit, so the flavors combine even better. Garnish with fresh parsley or dill leaves for an extra touch of freshness. Enjoy this delicious dish alongside a slice of lemon for an even more refreshing taste!
