Mushroom Meatloaf (II)
To prepare a delicious mushroom-based dish, we will start by choosing fresh ingredients. Choose high-quality mushrooms, such as champignon or pleurotus mushrooms, which will add a rich flavor to the dish. We cut the mushrooms into small cubes so they cook evenly and integrate perfectly into the mixture. The carefully selected onion is finely chopped so that it dissolves in our mix.
In a pan, we heat a little olive oil or vegetable oil over medium heat. We add the chopped onion and let it sauté, stirring constantly to prevent burning. It is important that this stage is done with patience, as we want the onion to become translucent and aromatic without browning too much. When the onion becomes soft, we add the diced mushrooms, mixing well to allow them to release their juices and combine with the flavor of the onion.
After about 5 minutes, when the mushrooms have started to brown, we add the finely chopped garlic. The garlic will add an intense and savory note to our dish. We season with salt and pepper to taste, being careful to mix well to distribute the flavors evenly. Finally, we add the freshly chopped parsley, which will provide an extra freshness. We leave the mixture on the heat for another 2-3 minutes, during which the flavors will combine perfectly.
Once we finish cooking, we take the pan off the heat and let the mixture cool. It is essential that it is not hot when we add the eggs, to avoid premature coagulation. Once the mixture has cooled, we add the beaten eggs and flour, mixing everything well with a spatula. The final consistency should be homogeneous and slightly liquid, but not too runny.
We prepare a tray that we grease with a little oil or butter, then pour in the mixture. We preheat the oven to 150 degrees Celsius. We place the tray in the oven for about 30 minutes or until the dish turns golden and firm to the touch. Finally, we let it cool for a few minutes before cutting it into portions. This recipe is ideal as an appetizer or main course and can be served both warm and cold, making it perfect for any occasion. Enjoy every bite!
