To prepare this delicious recipe for gooseberries, we start by carefully cleaning the gooseberries, removing their stems and washing them well under a stream of cold water. Meanwhile, we put a pot of water to boil, and when it reaches the boiling point, we add granulated sugar. It is essential for the sugar to dissolve completely in the water, and this process will take a few minutes. Once the syrup reaches boiling temperature again, it is time to add the gooseberries.

We let the gooseberries boil in this hot syrup for about 30-40 seconds. This time interval is sufficient for the fruits to change color and absorb the aroma of the syrup. After this time, we remove the gooseberries from the pot and carefully place them in a clean container. This step is important to avoid crushing the fruits. The syrup remains on the heat, where it must boil again until it reaches an appropriate temperature.

At this point, we add 1/2 tablespoon of salicylic acid, stirring constantly to ensure it dissolves completely in the syrup.
