Stuffed rolls with lamb's quarters: a rustic delight, full of flavor and textures

Who doesn’t love a steaming roll filled with flavor? These stuffed rolls with lamb's quarters are not only a delicious choice but also an excellent way to add a healthy touch to your meals. Lamb's quarters, a plant with green, succulent leaves, has been used for generations for its nutritional benefits, being rich in vitamins and minerals. This recipe combines tradition with innovation, offering you a dish that is simple to make but has a big impact both in taste and appearance.

Preparation time: 30 minutes
Rising time: 1 hour
Baking time: 40 minutes
Total time: 1 hour and 10 minutes
Number of servings: 10 rolls

Ingredients:
For the dough:
- 700 g all-purpose flour, sifted
- 100 g oats
- 100 g oat bran
- 100 g poppy seeds
- 2 cubes of fresh yeast
- 1 teaspoon brown sugar
- 1 teaspoon Himalayan salt
- 50 ml olive oil
- 600 ml lukewarm water
- 2 small free-range eggs
- grated parmesan (for decoration)
- caraway seeds (for decoration)

For the filling:
- approx. 750 g lamb's quarters leaves
- 3-4 tablespoons sunflower oil
- salt and pepper to taste
- 10 teaspoons semolina (to absorb the liquid from the filling)

Step by step:

1. Preparing the dough: Start by liquefying the yeast. In a large bowl, add Himalayan salt and brown sugar over the fresh yeast. Gently mix to combine. Add lukewarm water and poppy seeds. Mix well until the yeast is completely dissolved.

2. Incorporating dry ingredients: In the same bowl, incorporate the flour, bran, and oats. Mix with a spatula or wooden spoon until the dough begins to form. If the dough feels sticky, drizzle a little olive oil to easily detach it from your hands.

3. Dough rising: Cover the bowl with a clean kitchen towel and let it rise in a warm place for about an hour, until the volume has doubled.

4. Preparing the filling: Meanwhile, prepare the filling. Wash the lamb's quarters leaves thoroughly under cold running water to remove any impurities. Chop them finely. In a pan, heat the sunflower oil and add the chopped lamb's quarters. Sauté until all the liquid released by the lamb's quarters has evaporated. Season with salt and pepper to taste.

5. Forming the rolls: Preheat the oven to 170 degrees Celsius. Once the dough has risen, divide it into 10 equal portions. On a floured work surface, roll each portion into a circle about 1 cm thick. In the center of each circle, add a heaping tablespoon of lamb's quarters filling, then sprinkle a teaspoon of semolina to absorb any excess liquid.

6. Closing the rolls: Make cuts around the dough, then bring the edges together to form the rolls. Place them on a baking tray lined with parchment paper, with the seam side down.

7. Final rising: Let the rolls rise again in a warm place for 20-30 minutes.

8. Baking: Beat the two eggs and brush the rolls with the beaten egg. Sprinkle grated parmesan and caraway seeds on top. Place the tray in the preheated oven and bake for 40 minutes, using the convection baking function for an evenly browned crust.

9. Serving: Remove the rolls from the oven and let them cool slightly before serving. These rolls are delicious both warm and cold, and are perfect to enjoy alongside a fresh salad or as an appetizer at a festive meal.

Practical tips:
- If you can’t find lamb's quarters, you can use spinach or other spring greens.
- You can also add feta cheese or ricotta to the filling for a more intense flavor.
- For a spicier taste, add chili flakes to the filling.

Nutritional benefits:
These rolls are rich in fiber due to the bran and oats, contributing to healthy digestion. Poppy seeds are an excellent source of calcium, and lamb's quarters provide a significant amount of vitamins A and C.
