Today, I invite you to discover a pastitsio recipe with me, a dish that brings a touch of sunshine and tradition to every meal. This delicious dish, rooted in Mediterranean cuisine, is a wonderful choice for a family dinner or a special occasion.
Preparation time: 30 minutes
Baking time: 50 minutes
Total time: 1 hour and 20 minutes
Number of servings: 6-8
Necessary ingredients:
*For the pasta:*
- 400 g macaroni (choose high-quality varieties for better taste)
- 4 tablespoons of butter (I recommend using unsalted butter for better salt control)
- 3 tablespoons of grated cheese (opt for a cheese with an intense flavor)
- 3 eggs (at room temperature for better emulsification)
*For the filling:*
- 2 tablespoons of butter
- 1 medium onion (finely chopped for even sautéing)
- 1 garlic clove (crushed to release the aroma)
- 1 kg ground meat (choose beef or lamb, depending on your preference)
- 2 tablespoons of tomato paste (or tomato puree for a touch of acidity)
- 3 tablespoons of dry wine (choose a quality wine that adds depth to the dish)
- salt and pepper to taste
- 1 cup of water
*For the Bechamel sauce:*
- 2 tablespoons of butter
- 100 g flour (use white wheat flour for optimal results)
- 1 egg (at room temperature)
- 300 ml milk (preferably whole for a creamy sauce)
- salt and pepper to taste
Step-by-step preparation:
1. Boiling the macaroni:
In a large pot, add water and a pinch of salt and bring to a boil. When the water starts to boil, add the macaroni. Cook according to the package instructions, but opt for a shorter cooking time by 1-2 minutes to achieve an al dente texture. Once cooked, drain them and place them in a large bowl. Add melted butter, grated cheese, salt, and pepper. Mix well, then add the beaten eggs. Combine everything until the macaroni are evenly coated. Set aside.
2. Preparing the filling:
In a large skillet, melt the 2 tablespoons of butter over medium heat. Add the chopped onion and sauté until translucent. Add the crushed garlic and sauté for another minute. Incorporate the ground meat and cook until browned. Add the tomato paste, wine, and a cup of water. Season with salt and pepper. Let it simmer on low heat for 15-20 minutes or until the liquid reduces.
3. Preparing the Bechamel sauce:
In a small saucepan, melt the butter. Add the flour and stir constantly for 2 minutes to make a roux. Gradually incorporate the milk, stirring continuously to avoid lumps. Season with salt and pepper. When the sauce becomes creamy, remove it from the heat and add the beaten egg, stirring quickly to incorporate.
4. Assembling the pastitsio:
Preheat the oven to 180°C. In a baking dish, layer the pasta, followed by a layer of meat filling, then a layer of Bechamel sauce. Repeat the layers (pasta, meat, sauce) until you finish the ingredients, making sure to end with a layer of pasta. Top with the remaining Bechamel sauce and sprinkle some grated cheese on top.
5. Baking:
Place the dish in the preheated oven and bake for about 50 minutes, or until the top is golden and crispy. Let it rest for 10-15 minutes before slicing into portions.
Serving:
Serve the pastitsio warm, alongside a fresh green salad and a bottle of dry white wine for a truly memorable meal. You can also add some green or black olives for an extra burst of flavor!
Helpful tips:
- If you want to personalize your recipe, you can add vegetables like zucchini or eggplant to the filling.
- The pastitsio can be prepared a day in advance, and the flavors intensify after a night in the fridge.
- A gluten-free version can be made by using gluten-free pasta and almond flour in the Bechamel sauce.
Nutritional information:
One serving of pastitsio contains approximately 450-500 calories, offering a combination of protein from the meat, carbohydrates from the pasta, and healthy fats from the butter used. It is a hearty meal, perfect for those who need energy throughout the day.
