Couscous with Broccoli, Pine Nuts and Raisins
Our recipe starts with a star ingredient: broccoli. In a large pot, add water and a teaspoon of salt, then bring it to a boil. When the water starts to boil, add the broccoli florets and let them cook for about 5-7 minutes until they become tender but still crisp. If you prefer, you can steam the broccoli to better retain the nutrients. Once they are ready, remove them and let them cool slightly, making sure to drain them well.
Meanwhile, prepare the couscous according to the package instructions. If you opted for pre-cooked couscous, the process is quick and simple. I use a non-stick pot, where I add the couscous and stir it over low heat for a few minutes until it turns slightly golden. Then, add hot water obtained from boiling the broccoli, adding a piece of butter for extra flavor. Mix with a fork to prevent clumping and cover the pot with a lid, allowing the couscous to absorb the liquid quietly.
Now, let's focus on the pine nuts. In a pan, without oil, add the nuts and let them toast over medium heat, stirring constantly for a minute. The goal is to make them golden, not to burn them. This step will enhance their flavor, bringing a special taste to the dish. Once they are ready, remove them from the pan and set them aside.
In the same pan, add a splash of olive oil, a whole garlic clove, and, if desired, a pinch of chili pepper for a bit of spice. Once the garlic begins to release its aroma, add the cooked broccoli, toasted pine nuts, and a few raisins that have been soaked in water and then drained. Cook the mixture for 1-2 minutes, adding salt to taste.
Finally, carefully combine the broccoli with the couscous in a large bowl, mixing well to allow the flavors to blend. Serve this dish warm, savoring every bite of a delicious and healthy meal, full of varied textures and enticing aromas. This recipe is not only simple and quick but also extremely versatile, easily adaptable according to personal preferences.
