Ingredients:

- 50 ml of extra virgin olive oil
- 1 teaspoon of dried herbs (oregano, rosemary, or thyme) – optional, for extra flavor
- Sesame or poppy seeds for decoration (optional)
Instructions:
1. Activating the yeast: In a small bowl, combine the dry yeast with the sugar and 100 ml of lukewarm water. Let it sit for 5-10 minutes until the mixture becomes frothy. If using fresh yeast, dissolve it in lukewarm water and let it sit the same way.
2. Making the dough: In a food processor, add the flour, salt, and herbs (if using). Mix slightly to combine the ingredients. Add the activated yeast mixture and the remaining water, along with the olive oil. Start the processor on medium speed and knead the dough for about 10 minutes until it becomes elastic and pulls away from the sides of the bowl.
3. Proofing: Remove the dough from the processor and shape it into a ball. Place it in a bowl greased with a little olive oil, cover it with a clean towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until it doubles in size.
4. Shaping the grissini: After the dough has risen, sprinkle a little flour on a work surface. Divide the dough into smaller pieces, then roll each piece into thin sticks about 5 mm thick. You can make them longer or shorter according to your preference.
5. Baking: Preheat the oven to 200°C, and in the meantime, place the grissini on a baking tray lined with parchment paper. If desired, you can sprinkle sesame or poppy seeds on top. Bake the grissini for 20-25 minutes until they are golden and crispy.
6. Cooling and serving: After removing them from the oven, let them cool on a wire rack. These grissini are delicious served warm or at room temperature. I recommend serving them alongside a cheese dip or an olive paste for a savory appetizer.
