Thighs with Red Onion and Pomegranate Jam
Chicken thighs are an excellent choice for a savory and flavorful meal. We start by washing the thighs well, ensuring they are drained of water, then sprinkle them with a mixture of spices, honey, and mustard, which will provide a sweet and tangy flavor. It is important to make sure that each thigh is evenly coated with this mixture, allowing the spices to penetrate the meat.
For an extra burst of flavor, we slice the chili pepper thinly, being careful to keep the seeds if we want a spicier dish. Pomegranates are an excellent choice for decoration and flavor; the seeds are delicately removed, taking care not to crush them. The sweetness of the red onion, a key ingredient, is softened with red wine, creating a rich and delicious sauce.
In a pot, we heat the olive oil and brown the thighs for about two minutes on each side, achieving a golden and appetizing crust. After browning, we place the thighs in the appropriate baking dish and drizzle them with the onion jam, adding the slices of chili pepper and a few red peppercorns for extra color and flavor. To thicken the sauce, we add Gorgonzola Piccante, which will bring a creamy and salty note. Then, we add the sliced onion and continue to simmer, stirring frequently. When the onion becomes translucent, we add brown sugar and crushed tomatoes. We keep the heat low and cover, cooking for another 15 minutes, stirring occasionally.
To enhance the sweet and sour taste, we add a pinch of salt and a few crushed red peppercorns, and for a splash of flavor, a bit of cognac. We let everything simmer until the onion is perfectly soft and the sauce has thickened, ready to be served alongside the delicious thighs.
