Simple and Fluffy Cozonac
To prepare a delicious cozonac, the first essential step is to sift the flour into a large bowl, ensuring it is aerated and free of lumps. After sifting the flour, create a well in the center, a small crater, where you will add the ingredients. In this well, add the salt, egg yolks, grated lemon and orange zest, which will give the cozonac a tempting aroma and unmistakable flavor.
In another container, gently heat the milk and dissolve the sugar and yeast in it. Make sure the milk is not too hot, so as not to destroy the yeast. Once the yeast is activated, pour the milk mixture into the flour well, mixing with a fork or your hands to incorporate all the ingredients. When the mixture begins to come together, gradually add the melted lard, continuing to knead the dough until it becomes elastic and smooth.
After kneading, let the dough rise in a warm place, covered with a damp towel, for about 2 hours. If the room temperature is low, it may take longer, so be patient. When the dough has risen significantly, divide it into six equal portions on an oiled table. Roll out each piece with a rolling pin, forming a thin layer.
Now, sprinkle the sugar mixed with cocoa on each rolled-out piece of dough. This combination will add a sweet and aromatic taste, perfect for filling the cozonac. Roll each piece of dough and then braid two rolls together to form the cozonaci. Place them in greased baking trays lined with flour, allowing them to rise again until they are nearly reaching the edge of the tray.
After they have risen, brush the cozonaci with a mixture of egg yolk and milk to give them a golden and appetizing crust. Sprinkle sugar on top, which will caramelize during baking. Preheat the oven to 180 degrees Celsius and bake the cozonaci for about an hour, or until they are golden and well browned.
Finally, enjoy the warm cozonac alongside a cup of milk, and savor each fluffy and aromatic slice. The cozonac is not just a dessert, but a true treasure of Romanian tradition!
