In a deep tray or in a pot that can be placed in the oven, we start by adding a generous amount of lard, which will provide a rich taste and perfect texture to our dish. We carefully prepare the vegetables: we peel the onion, garlic, carrots, parsley, bell pepper, and sweet pepper. The onion will be cut into thicker slices to caramelize beautifully during baking, while the carrots and parsley will be sliced into rounds to add sweetness and flavor. The garlic will be finely sliced, and the bell pepper, hot pepper, and sweet pepper will be cut into strips to bring more color and flavor to the dish.

The rabbit meat, the perfect choice for a delicious meal, will be generously seasoned with salt and pepper to enhance the flavors. Once we have prepared all the ingredients, we are ready to move on to the next stage. In the tray with lard, we place a generous layer of onion, carrots, parsley, garlic, bell pepper, hot pepper, and sweet pepper. On top of this colorful mix, we place the well-seasoned pieces of rabbit meat and a few pieces of smoked bacon, which will add a smoky and rich flavor. Bay leaves are essential to give a special aroma to the dish.

To further intensify the flavors, we pour 300 ml of dry or semi-dry white wine over all the ingredients, which will help tenderize the meat during baking. We complete with water so that the meat is almost covered, allowing it to peek out slightly above. We sprinkle a dash of Delikat and 1/4 teaspoon of thyme, adding a note of freshness.

Now, everything is ready for the oven. We cover the tray and place it in the oven, letting the meat roast slowly until it becomes tender and juicy. It is important to be patient, as every minute spent in the oven will help the flavors develop. When the dish is ready, we serve it with a soft and creamy mashed potato, which will perfectly complement this dish. Enjoy your meal!

1 kg rabbit meat, 2-3 carrots, 2 parsley roots, 4-5 pieces of onion (red and white), 1 bell pepper, 1 sweet pepper, 1 hot pepper, 6-7 cloves of garlic, 2-3 bay leaves (smaller), 1/4 teaspoon thyme, salt, delicate pepper, 300 ml dry or semi-dry white wine, 300 g smoked bacon cut into cubes, 3 tablespoons of lard.
