To prepare this delicious dish, we start by making the wine sauce, which will add a refined flavor to our dish. In a medium-sized saucepan, we pour in red wine, which is the main ingredient of the sauce. We add the grated zest of a lemon, which will provide a note of freshness, and two sprigs of rosemary, which will intensify the aroma. We do not forget to season with salt and pepper to taste, and then we introduce the finely chopped onion to enrich the flavor of the sauce. We let the sauce simmer over medium heat, stirring occasionally, until its volume decreases considerably and the flavors concentrate.

Once the sauce has reached the desired consistency, we add a piece of butter (about 25g) and mix well to achieve a velvety texture. The next step is to strain the sauce to remove the solids, allowing it to cool slightly. Now our wine sauce is ready to be used.

We then move on to preparing the pork. In a deep frying pan, we put a little olive oil and add the remaining two sprigs of rosemary to infuse the oil with flavor. Then, we introduce the pork, cut into suitable pieces. We let the meat brown on one side until it becomes golden, and then we turn it to the other side. After the meat is evenly browned, we add 150 ml of water and let it simmer. It is important to monitor the process, and if the water evaporates completely and the meat is not tender enough, we can add a little water and continue cooking until it becomes tender.

Meanwhile, we take care of the apples. We peel the apples and cut them into cubes. Then, we add them to a small saucepan, along with a little butter and a pinch of salt. We let the apples sauté gently, stirring them, and then we deglaze with white wine. We let the mixture cook until the wine reduces and thickens slightly, and the apples become tender but retain their shape.

To serve, we arrange pieces of pork on plates, cover them with the wine sauce we prepared earlier, and add the caramelized apples alongside. This dish is served immediately to enjoy the flavors in all their splendor. Served slightly warm, this dish is a true delicacy, perfect for a special dinner. Enjoy your meal!
