Pork with black mustard seeds and roasted vegetables

Meat - Pork with black mustard seeds and roasted vegetables by stefania M. - Recipia

Pork with black mustard seeds and roasted vegetables is cooked slowly, then browned, with tender potatoes and carrots. I especially love the black mustard seeds, which toast on top and crackle a little. I spoon a little pan juice over the potatoes when I serve them. Prep: 20 minutes. Cook: 70 minutes. Rest: 3 hours and 30 minutes. Total time: 5 hours. Serves: 4. Approximately 610 kcal and 45 g protein per serving.

Ingredients

For the meat

  • 800 g pork leg cut into 7-8 slices
  • 50 ml milk
  • 15 ml white truffle oil
  • 15 ml balsamic vinegar
  • 1 teaspoon curry powder
  • 1/2 teaspoon hot paprika
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon black mustard seeds
  • 1 teaspoon fennel seeds

For the vegetables

  • 600 g potatoes
  • 300 g carrots
  • 1 teaspoon salt
  • 1 teaspoon curry powder
  • 1 teaspoon sweet paprika
  • 15 ml corn oil
  • 1 teaspoon black mustard seeds
  • 1 teaspoon fennel seeds
  • 250 ml cold water

Preparation

1. Pat the pork leg dry with paper towels. Mix the milk, white truffle oil, balsamic vinegar, curry powder, hot paprika and nutmeg, then coat the slices of meat with the marinade. Cover the dish and refrigerate for 3 hours and 30 minutes. 2. Heat the oven to 160°C. Lightly crush the black mustard seeds and fennel seeds for the meat, sprinkle them over the slices and place the meat with its marinade in an oven-safe dish. 3. Peel the potatoes and carrots and cut them into pieces about 3 cm across. Toss them with the salt, curry powder, sweet paprika and corn oil. Wet the parchment paper with the 250 ml cold water and wring it out well. Place it in a baking tray, with the edges long enough to cover the vegetables, then add the vegetables. 4. Put both dishes in the oven for 50 minutes. The meat and vegetables start to soften, and the marinade gently sizzles in its dish. 5. Lightly crush the mustard seeds and fennel seeds for the vegetables and sprinkle them over the vegetables after the first 50 minutes. Cover them again and bake everything for 10 more minutes at 160°C, until the carrots are tender. 6. Take the tray of vegetables out. Turn the oven up to 220°C and brown the meat for 10 more minutes, until the edges take on some color.

Notes

A simple green salad on the side keeps the plate fresh without covering up the meat’s spiced flavor. You can replace the white truffle oil with 15 ml olive oil, and the milk with 50 ml water if you want to avoid dairy; the basic version contains dairy. Try to use slices of pork leg that are about the same thickness, since the thinner ones soften before the thicker ones. When buying it, look for pork leg with a little visible fat, not completely trimmed. Cut the potatoes and carrots into similar-sized pieces; finely cut carrots soften first. Yellow mustard seeds can replace the black ones in the same amount, but they have a milder flavor. I can’t really eat the same thing twice without changing something; from one batch to the next, I change a spice or two, even if I keep the same basic recipe. Store leftovers in a sealed container in the fridge for up to 3 days.

Frequently asked questions

Yes. Use 800 g pork chops cut into 2 cm slices and start checking for tenderness after 35 minutes at 160°C.

What if the pork leg is still tough after baking?

Cover the dish and leave it for 15 more minutes at 160°C, then check whether it has softened.

Can I use ground fennel?

Yes, use 1/2 teaspoon ground fennel in place of each teaspoon of seeds.

Can I marinate the meat overnight?

Yes, leave it in the fridge for no more than 12 hours and take it out 20 minutes before putting it in the oven.
