To prepare this delicious recipe, we start by gathering all the necessary ingredients. We will use green or black olives, depending on preferences, which will add an intense and savory flavor. Roasted almonds will bring a crunchy texture, while Parmesan or Grana Padano will provide a unique taste. Fresh parsley leaves will add a touch of freshness, while olive oil will bind all the ingredients together, creating a homogeneous and aromatic paste.

Thus, we place in the food processor the chopped olives, almonds, grated Parmesan or Grana Padano, washed and finely chopped parsley leaves, olive oil, salt, pepper, and mustard seeds. We blend all the ingredients at medium speed until we obtain a fine paste, but with a little texture. This composition will be the delicious base for the dough we will prepare.

After obtaining the paste, we turn our attention to the dough. We roll out the dough sheet on a floured work surface, with the shorter side facing us. The previously prepared composition is spread evenly over the dough with the help of a spatula, ensuring it is well covered. Then, we imagine a line that divides the dough into two halves. The side of the dough facing us is folded towards this imaginary line, after which the same is done with the other half of the dough, so that the two sides meet.

After folding the dough, we brush it with milk to achieve a golden and appetizing crust. A new fold is made, bringing the two sides to meet again, and it is brushed again with milk. Now, from the prepared dough, we cut pieces about 1.5 cm thick. We gently lift the ends of each piece of dough, thus forming the letter 'v'.

The oven is preheated to 180 degrees Celsius, and in the meantime, we take care of the tray which we line with baking paper. We place the pieces of dough in the tray, making sure to leave space between them to allow for expansion during baking. They are baked in the oven for about 15-20 minutes until we obtain a nice, golden color that makes us crave.

After baking, we let the treats cool a bit in the tray. These snacks can be served warm or at room temperature, being ideal for a quick snack or as appetizers at a festive meal. They pair excellently with a glass of white wine or a refreshing drink, bringing an extra flavor to the moments spent with loved ones. Enjoy your meal!

 Ingredients: - 75 g pitted black olives, chopped - 95 g ground almonds (I used almond flakes which I added as they are into the food processor) - 25 g grated Grana Padano / Parmesan cheese - 2 tablespoons of chopped parsley leaves (I used fresh parsley leaves which I added as they are into the food processor, thus estimating the necessary amount - I even added a little more parsley than mentioned in the book) - 60 ml extra virgin olive oil - 1/4 teaspoon of salt (you may need more salt depending on the olives you use) - 1/2 teaspoon of freshly ground black pepper - 2 teaspoons of mustard seeds - ready-made puff pastry (the pastry I used was in the shape of a rectangle with dimensions 37 x 28 cm) - 60 ml milk
