The meat is washed well under a stream of cold water, then dried with a kitchen towel to remove excess water. In a large bowl, we mix 3 tablespoons of quality mustard, preferably Dijon, with 2 tablespoons of natural honey, which will add a touch of sweetness, and 2 tablespoons of grated horseradish, which we can combine with mayonnaise to obtain a rich cream. Alternatively, the horseradish can be mixed with sour cream or whipped cream, depending on personal preferences. Using this flavorful mixture, we generously grease a sheet of aluminum foil, which we place in a baking dish. We place the piece of meat, which has been salted beforehand, in the center of the foil and generously coat it with the prepared mixture, ensuring that all parts of the meat are covered. On top, we sprinkle freshly ground pepper for added flavor.

The garlic is sliced thinly, and the onion is sliced into rings, while the carrots are peeled and cut into thin rounds. Some of these vegetables are placed under the meat, while the rest are evenly distributed on top. The remnants of the mixture with which we greased the meat are poured generously over the vegetables, adding a savory taste. After wrapping the meat well in foil, we let it chill for 12 hours to allow the flavors to penetrate.

The next day, we carefully unwrap the foil and pour 50 ml of plum brandy over the meat, which can be replaced with fine cognac or high-quality vodka to enhance the dish's aroma. We cover the meat again with the aluminum foil and place it in the preheated oven. After about an hour of baking, we take the dish out of the oven and add a few pieces of butter (about 50 g) on top of the meat, which will help create a delicious crust. We return the meat to the oven, leaving it uncovered for another 30 minutes until it becomes nicely browned.

If you prefer a tangier taste, adding 100 ml of dry white wine before sealing the foil can work wonders in the flavor profile of the dish.
