To prepare a delicious meat roll with a cheese crust, we start by preparing the necessary ingredients. The first step is to take a piece of bread, which we will soak in cold water so that it softens and becomes easy to handle. This bread will help achieve a juicy and flavorful composition.

While the bread is soaking, we take care of the onion. We take the three pieces of onion and chop them finely, ensuring we get a uniform texture. The onion will add a note of sweetness and an intense aroma to our roll. In a large bowl, we add the minced meat, which can be pork, beef, or a combination of both, depending on personal preferences. We squeeze the bread well and add it to the bowl with the meat, along with the chopped onion.

Now, it's time to season the mixture. We add two teaspoons of mustard, which will provide a slightly spicy taste, and then the two eggs, which will help bind the ingredients. We don't forget to add salt and pepper to taste, as well as a teaspoon of sweet paprika, which will give a nice color and delicious flavor. We mix all the ingredients well until we achieve a homogeneous composition.

The next step is to shape the obtained composition into a roll, which we place in a greased baking dish. The dish must be well prepared to avoid the roll sticking. We preheat the oven to a low temperature and place the roll inside for about 30-40 minutes, placing it on the middle rack of the oven.

In the meantime, we prepare the cheese crust. In a bowl, we crack an egg and add the grated cheese, which must be of good quality to achieve a delicious and golden crust. We add pepper, a teaspoon of paprika, chopped fresh parsley, and salt. We grate ½ onion and add it to the mixture, along with two tablespoons of breadcrumbs. We mix all the ingredients well until we obtain a uniform composition.

After 30 minutes of baking the roll, we take the dish out of the oven and spread the cheese mixture evenly over the surface of the roll. Then, we put it back in the oven for another 15-20 minutes, until the crust becomes golden and crispy.

Once the roll is ready, we let it cool slightly before slicing it. This way, we get beautiful portions that we can serve alongside a fresh salad or preferred side dishes. Enjoy your meal!
