We start by preparing the necessary ingredients for a delicious chicken and vegetable skewer. The first step is to cut the chicken fillets into cubes of about 3 cm, ensuring that each piece is uniform so that it cooks evenly on the grill. We apply the same procedure to the vegetables; we can choose bell peppers, onions, zucchini, or mushrooms, cutting them into similar cubes as the chicken. After cutting all the ingredients, we turn our attention to marinating the chicken. In a bowl, we add the chicken cubes and season them with salt, pepper, sweet or smoked paprika, as preferred, and maybe even a little garlic powder. Then, we add a tablespoon or two of olive oil, which will help incorporate the flavors and prevent the meat from sticking to the grill. We mix well so that each chicken cube is evenly coated with spices and oil. We cover the bowl with plastic wrap and let it sit in the fridge for about 40 minutes, allowing the flavors to penetrate the meat well. After the chicken has marinated, we prepare to assemble the skewers. We take bamboo sticks specially designed for skewers and begin alternating the chicken cubes with the chosen vegetables. It is important to consider the colors and textures to create a dish that is not only tasty but also aesthetically pleasing. For example, we can start with a cube of chicken, followed by a cube of red bell pepper, then a cube of onion, continuing this way until the stick is full. We leave a small space between the ingredients on the skewer to allow air circulation and help with even cooking. After assembling all the skewers, we head to the grill. This can be a non-stick grill that we can use on the stovetop, or for an authentic experience, we can grill over charcoal. It is essential that the grill is well heated before placing the skewers on it to ensure a delicious crust on the outside and juicy meat on the inside. We grill the skewers for about 10-15 minutes, turning them occasionally for even browning. When the skewers are ready, we can serve them hot, alongside a fresh salad or a garlic yogurt sauce.
