To prepare a delicious cabbage pie, we will start by taking care of the dough. In a small bowl, we mix the yeast with the sugar, making sure to obtain a liquefied composition that will activate the yeast. This first step is essential for getting a fluffy and tasty dough. In a larger bowl, we pour the flour, add the salt, the activated yeast, and the warm water, mixing them well. Let's start kneading! The dough should become elastic and homogeneous, which may take about 10-15 minutes. After achieving the desired consistency, we cover the bowl with a clean towel and let the dough rise in a warm place for 30-40 minutes, until it doubles in volume.

Meanwhile, we turn our attention to the filling. The cabbage is finely chopped, and this process can be a real therapy, allowing us to focus on each slice that transforms into flavorful ingredients. In a pot, we heat a little oil, then add the chopped cabbage. We let it sauté over medium heat, stirring periodically, until it becomes soft and translucent. At this point, it's time to season it with salt and pepper, but I prefer to add a bit more pepper to give it a spicier taste and a touch of character.

After the dough has risen, we divide it into four equal parts, each of which will become a sheet. In a baking tray lined with a little oil and flour, we roll out the first sheet, making sure it is even. We then place a generous layer of sautéed cabbage, spreading it evenly. We continue to roll out the second sheet, which we carefully place over the filling. We let everything rise again, this time for about 15 minutes, to allow the dough to puff up a bit.

Before putting the tray in the oven, it is important to prick the pie with a fork to allow steam to escape during baking. We also brush the surface with beaten egg, which will give the pie a golden, shiny crust, particularly appetizing. We preheat the oven to low heat and place the tray inside, letting the pie bake for 50 minutes.
