Ingredients:
- 1.5 kg grated quinces (look for firm and fragrant quinces, preferably from the market)
- 1 lemon (choose an organic lemon to avoid pesticides)
- 1.5 kg sugar (use gel sugar for a perfect texture)
- Peels and cores from the quinces (don’t throw them away, we will use everything)

Step 1: Preparing the quinces
Start by washing the quinces well. This is essential to remove any impurities. After washing, dry them with a towel and peel them. Use a sharp knife to remove the skin and seeds. Grate the quinces into a large bowl, as we will add lemon juice over them to prevent oxidation.

Step 2: Preparing the lemon juice
Squeeze the juice from the lemon and add it over the grated quinces. This will not only keep their beautiful color but will also add a slightly tangy taste that perfectly complements the jam. Mix well and set the mixture aside for about 15-20 minutes so that the quinces release their juice.

Step 3: Preparing the mixture
In a large pot, place the peels and cores of the quinces together with 2 liters of water and the lemon peel (it’s also good to use grated peel for extra flavor). Boil the mixture over medium heat until the water reduces to about 1 liter. This will add an intense flavor and maximize the aroma of the jam. After boiling, strain the liquid and let it cool.

Step 4: Cooking the jam
Add the cooled liquid over the grated quinces and mix well. Now it’s time to add the sugar. Stir until the sugar completely dissolves. Put the mixture back on the heat and simmer for about 30-40 minutes, stirring frequently to prevent sticking. You will notice how the jam starts to thicken and become glossy.

Step 5: Bottling the jam
When the jam has reached the desired consistency (you can do the drop test to check if it sets), pour it hot into sterilized jars. Screw on the lid immediately after filling and let the jars cool completely before storing them. This will ensure a perfect seal.
