Fish with zucchini and mushrooms
To prepare a delicious fish dish with zucchini and mushrooms, we start by ensuring that we have all the necessary ingredients ready at hand. First, we clean the fish fillets of skin, making sure to remove any small bones as well, to have a pleasant and safe texture. We recommend white fish fillets, such as cod or pangasius, which cook quickly and have a delicate taste.
After cleaning the fish, we focus on the vegetables. We slice the zucchini into thin rounds, so they cook evenly, and cut the mushrooms into quarters. These vegetables will add both flavor and a pleasant texture to the dish.
In a deep pot, we add olive oil, letting it heat up slightly. Then, we add the vegetables: zucchini and mushrooms, mixing them well with the oil. We sprinkle salt over them, which will help draw out the juice from the vegetables, and cover the pot with a lid. This way, we will steam the vegetables, allowing them to soften for a few minutes until they become slightly translucent.

We let everything simmer uncovered, allowing the steam to escape, for about 15 minutes. It is important to check periodically if the fish is cooked, and the zucchini is tender enough to be easily pierced with a fork. If you prefer the zucchini and mushrooms to be softer, you can steam them a little longer before adding the fish.
