To prepare a delicious pork neck recipe with vegetables, we start by making sure we have all the necessary ingredients at hand. First, we choose a good piece of pork neck, which we will boil for 15 minutes. This step helps improve the texture of the meat and reduces the cooking time later. After boiling, we drain the meat and let it cool completely. Once it has cooled, we cut the neck into thin strips, which will be easier to cook and will absorb the flavors of the sauce.

Over the strips of meat, we add a tablespoon of soy sauce, a tablespoon of cornstarch, and a pinch of salt. We mix everything well, ensuring that the strips of meat are evenly coated with the marinade. We let the meat marinate for about 20 minutes in the refrigerator to allow the flavors to penetrate. In the meantime, we take care of the vegetables. We peel and wash the carrot, then cut it into thin strips. We will also cut the peppers, making sure to remove the seeds from the hot peppers to control the level of spiciness.

After the meat has marinated sufficiently, we take the strips out of the refrigerator. We prepare the garlic and ginger, which we peel and chop finely. We first add the sliced peppers, lightly frying them, then we add the carrots. After a few minutes, when the vegetables start to soften, we also add the red and yellow peppers. We let them sauté together, stirring occasionally. When the vegetables are almost done, we reintegrate the meat into the pan.

To bind all the ingredients, we prepare a sauce from two tablespoons of cornstarch, two tablespoons of soy sauce, and a little water. Once the mixture is smooth, we pour it over the meat and vegetables. We leave everything on the heat, stirring constantly until the sauce thickens and binds well to the meat and vegetables.
