To prepare a delicious stew, start by cutting the pork or beef into suitably sized cubes, then coat each piece in flour, ensuring it is evenly covered. This step will not only help achieve a delicious crust but will also thicken the sauce. Heat a deep pan or pot with a generous amount of oil, then add the meat, browning it on all sides until golden and appetizing. Once you have a nice crust, remove the meat from the pan and set it aside.

In the same pan, add the finely chopped onion and sauté it over medium heat. Stir constantly to prevent burning, and when the onion becomes translucent and changes to a pleasant golden color, add the peeled and cubed potatoes. Mix well and let the potatoes sauté alongside the onion, stirring occasionally until they become slightly translucent, which will take about 5-7 minutes.

After the potatoes are ready, return the meat to the pan and add the beer, allowing it to boil for a few minutes to evaporate the alcohol and concentrate the flavors. Depending on your preferences, you have two options to continue cooking: either add water if you feel the mixture is too thick, allowing it to simmer on low heat, or immediately add the diced tomatoes with their juice, seasoning with salt and pepper to taste. If you choose the first option, let it simmer until the potatoes are nearly done and the sauce has reduced.

If you opt for the oven, after adding the tomatoes, cover the dish and place it in the preheated oven at 180 degrees Celsius. Let it bake until the potatoes are tender and the sauce has thickened, this process takes about 30-40 minutes. In the end, check the taste and adjust the seasonings if necessary.
