To prepare a delicious meal, start with the pork chop, slicing it into thin slices and then into appropriately sized pieces. Place these pieces in a larger bowl, where you will add the necessary ingredients for the marinade, such as olive oil, crushed garlic, soy sauce, honey, lemon juice, salt, and pepper. Mix all the ingredients well so that the meat is evenly coated. Cover the bowl with plastic wrap and let it sit in the refrigerator for at least 30 minutes, but if you have time, a longer marination will enhance the flavors.

While the meat is marinating, you can prepare the potatoes. Peel them and cut them into thin slices or cubes, as preferred. Arrange the potatoes in a heat-resistant dish or tray, making sure to place them in a single layer as much as possible. Drizzle them with olive oil and lemon juice, which will give them a crispy texture. Season with salt and pepper to taste, and add oregano or fresh parsley for extra flavor. Pour water into the tray until it reaches halfway up the layer of potatoes, and bake in a preheated oven at 180 degrees Celsius for about 15-20 minutes, until the potatoes are almost cooked and the water has evaporated.

Meanwhile, in a large skillet, heat the oil over medium heat. Add the pork with the marinade and let it fry, stirring frequently, until it is nicely browned. Then, add the white wine, bay leaf, and enough water to cover the meat. Simmer everything partially covered, over medium to low heat, until the meat becomes tender and the sauce thickens. Finally, season with salt and freshly ground pepper to taste.

After the potatoes have cooked, remove the tray from the oven and brush them with a little oil. Put them back in the oven for another 10-15 minutes, until they become golden and crispy on the surface. Turn off the heat and leave the tray in the oven for another 5 minutes to allow the flavors to meld.

Serving is a key moment. Place the pork chop on a platter, alongside the roasted potatoes. You can sprinkle oregano or fresh parsley on top for a fresh and appetizing look. This dish pairs perfectly with a refreshing salad or your favorite pickles, creating a culinary feast that will delight all guests. Enjoy your meal!
