New Pea Stew
To prepare a delicious pea dish with meat, we will start by preparing the necessary ingredients. Make sure you have on hand a medium onion, tomato paste, peas (fresh or frozen), beef or chicken cut into cubes, vegetables (carrot, parsley, celery), olive oil, salt, pepper, and fresh herbs like parsley or dill.
In a large pot, finely chop the onion and sauté it in a little water with olive oil. This will add a pleasant aroma and a sweet taste to the dish. Start by adding the chopped onion and let it sweat for 3-5 minutes, stirring occasionally to prevent it from sticking to the bottom of the pot. Once the onion becomes translucent, add the tomato paste and the jarred vegetables. These ingredients will enrich the dish with an intense flavor and an attractive color.
After adding the tomato paste, add a little water and let everything simmer on low heat for 10 minutes, so the flavors blend perfectly. Now is the time to add the peas and the cubes of meat. If you are using beef, make sure it is cut into suitable cubes for even cooking. Add enough water to cover the peas and meat, then season with salt and pepper to taste. Cover the pot and let it simmer for 20 minutes, stirring occasionally to prevent the ingredients from sticking to the bottom of the pot.
After this time, check if the meat is well cooked and the peas are tender. Finally, add the freshly chopped herbs, which will bring an extra freshness and color to the dish. If you want to thicken the sauce, you can prepare a roux from water and flour or starch. Add this mixture towards the end of the cooking, stirring constantly to prevent lumps from forming. Let it simmer for a few more minutes until the sauce becomes creamy and consistent.
Serve this dish warm, alongside steaming polenta or mashed potatoes. It is a comforting meal, perfect for chilly days, that will bring joy to both family and friends. Enjoy your meal!
