Of course, Italians have many ways to prepare mussels, this being just one of them, but surely among the most delicious! First of all, you need to clean the mussels very well under running water with a wire sponge. You will notice that some of them have a sort of silk that you need to remove. Mussels that are open mean they are dead and should be discarded because you don’t want to consume them. For this dish, I used the wonderful pot from the Multicooker, but of course, you can also use a deep pan, although the flavors are much better preserved in the Multicooker. Put a few tablespoons of olive oil in the pot and the crushed garlic cloves with the knife blade. Be careful not to burn the garlic; add it to the pot along with the oil and sauté on low heat. When the garlic starts to change color, add the tomato sauce and chili sauce. Then add the mussels and a little chili. After a minute, pour in the wine. I then closed the lid and let it cook for another 3 minutes. Do not leave the mussels for more than 3 minutes, as they have very tender meat! You can remove the closed mussels at this stage. After the 3 minutes are up, add the juice of half a lemon and the chopped parsley, not too finely. Heat a grill pan, and when it is well heated, grill the slices of bread on both sides for 1-2 minutes until they become slightly crispy on the outside. You can also put them in the oven and drizzle with a little olive oil.
