To prepare a delicious dish with leeks and meat, we start by washing the leeks thoroughly, ensuring we remove any impurities or dirt. After cleaning them, we cut them into slices about 1 cm – 1.5 cm thick, so they cook evenly. These pieces of leek will add a delicate flavor and a pleasant texture to our dish.

Once cut, we bring water to a boil in a pot and add a teaspoon of salt, then blanch the leeks for 2 minutes. This step not only helps to soften the leeks but also intensifies their color and flavor. During this time, we take care of the onion. We slice the onion into thin rings so that it cooks faster and more evenly. In a pan, we add a little oil and sauté the onion over medium heat, stirring constantly until it becomes glassy and slightly golden.

Once the onion is ready, we add the portioned meat, whether it is pork, beef, or chicken. We sprinkle a little seasoning to enrich the flavor of the dish. We continue to sauté the meat together with the onion, stirring occasionally to ensure it browns evenly.

After a few minutes, we add a glass of water to the pan, covering the meat, and let it simmer over medium heat. It is important to cover the pan with a lid so that the meat stews well. After about 10 minutes, we add the tomato paste, which will provide a rich taste and an appetizing color to our dish.

After adding the tomato paste, we let everything simmer together for another 10 minutes. Then, we introduce the blanched leeks into the meat and sauce mixture. We add enough water to cover the ingredients by about 2 fingers. Now, we let it simmer on low heat so that the flavors blend perfectly until the water reduces to the desired level.

When the water has reduced, we add salt and pepper to taste, adjusting the seasoning according to personal preferences. It is time to enjoy the enticing aroma that fills the kitchen. We serve the dish hot, either alongside a side of polenta or with fresh bread to soak up the delicious sauce. Enjoy your meal!
