To prepare a delicious and hearty meal, we start by frying the sausages. In a heated pan with oil, add the sausages and fry them, carefully turning them on all sides until they become golden and crispy. This will take about 10-15 minutes, and the result will be a beautifully browned sausage, full of flavor. Once they are ready, remove them to a platter lined with absorbent paper to remove excess oil and keep them warm in a sheltered place.

Meanwhile, we take care of the delicious side dish. Boil the potatoes with the skin on, in a pot of salted water. They will be ready when a fork easily pierces them, which will take about 20 minutes. After boiling, drain them, let them cool slightly, then peel them and cut them into perfect cubes. This side dish will add a pleasant texture and a subtle taste to the dish.

In parallel, roast the peppers on the stovetop or in the oven until the skin becomes black and slightly cracked. Then, peel off the skin, stem, and seeds, cut them into strips, and keep the juice that is released, which will add extra flavor.

In a pan, add a little oil and sauté the finely chopped onion along with the sliced hot pepper (if desired, you can remove the seeds to reduce spiciness). Add the sliced carrot and stir everything until the vegetables begin to soften, about 5-7 minutes. Add the roasted pepper strips and the released juice, seasoning with salt, pepper, and a little chili powder to taste. Continue to sauté the mixture until the vegetables caramelize slightly, giving them a rich flavor.

Once the vegetables are almost ready, add the corn kernels and/or well-drained sliced mushrooms, and the potato cubes. Let it cook for another 2-3 minutes, stirring constantly to integrate all the flavors. Don't forget to adjust the seasonings to achieve the perfect taste.

When the vegetables are ready, remove the pan from the heat and add the sour cream, mixing well to homogenize the composition. This will add a creamy appearance and a divine taste to the side dish.
